It is freely admitted that fermented wine improves with age, but this is not due to any increase of alcohol, but to decrease of astringency and the development of the aroma. The same thing is true of unfermented wine. The peculiar aroma and fruity taste are developed by age; and to him whose taste has not been depraved by alcoholic drinks, the unfermented will be the good wine. The fruit of the vine is said, in Jud. 9 13, to cheer God and man. It does this before fermentation, because it is then the appropriate thing to be used in religious ceremonies, and it is then both nourishing and cheering to the human family.
