This thesis explores the physics of non-equilibrium quantum dynamics in homogeneous two-dimensional (2D) quantum gases. Ultracold quantum gases driven out of equilibrium have been prominent platforms for studying quantum many-body physics. However, probing non-equilibrium dynamics in conventionally trapped, inhomogeneous atomic quantum gases has been a challenging task because coexisting mass transport and spreading of quantum correlations often complicate experimental analyses. In this work, the author solves this technical hurdle by producing ultracold cesium atoms in a quasi-2D optical box potential. The exquisite optical trap allows one to remove density inhomogeneity in a degenerate quantum gas and control its dimensionality. The author also details the development of a high-resolution, in situ imaging technique to monitor the evolution of collective excitations and quantum transport down to atomic shot-noise, and at the length scale of elementary collective excitations. Meanwhile, tunable Feshbach resonances in ultracold cesium atoms permit precise and dynamical control of interactions with high temporal and even spatial resolutions. By employing these state-of-the-art techniques, the author performed interaction quenches to control the generation and evolution of quasiparticles in quantum gases, presenting the first direct measurement of quantum entanglement between interaction quench generated quasiparticle pairs in an atomic superfluid. Quenching to attractive interactions, this work shows stimulated emission of quasiparticles, leading to amplified density waves and fragmentation, forming 2D matter-wave Townes solitons that were previously considered impossible to form in equilibrium due to their instability. This thesis unveils a set of scale-invariant and universal quench dynamics and provides unprecedented tools to explore quantum entanglement transport in a homogenous quantum gas.

An international workshop on Elementary Excitations and Fluctuations in Magnetic Systems was held in Turin for five days beginning 25 May, 1987. The workshop followed much the same format as the one with the same title held in San Miniato in 1984 (proceedings: Springer Series in-Solid-State Sciences, Vol. 54), that most participants contributed talks and provided papers for the proceedings. While many of the participants had attended the first workshop, 15 of the 40 invited review papers were presented by scientists who had not. The majority of the talks reported theoretical work concerned with the introduction of new techniques. However, experimental work was also well represented, not least because many of the reported theoretical studies were motivated by experimental findings, and a highlight of the workshop was an extremely stimulating session devoted to recent neutron scattering measure ments, on various systems, that exploited polarization analysis. The fine venue of the workshop, Villa Gualino, with its excellent facili ties and spacious accommodation, helped to produce a delightful relaxed and friendly atmosphere. For the use of Villa Gualino and significant financial support we are indebted to our host organization, the Institute for Scien tific Interchange (lSI). The study of quantum fluids in three dimensions has been an important area for many years as it embraces Bose-Einstein condensation, superfluidity and macroscopic quantisation. These are fundamental aspects of physics which can be studied in liquid 4He. In contrast, quantum fluids in two dimension is more recent and less developed. Nevertheless it has shown many interesting phenomena including a rich variety of phases and the Kosterlitz-Thouless transition. Intermediate between these dimensions are the restricted geometries of micro porous materials into which He may be introduced. The main quantum materials considered are 4He, 3He, D2, H2, H and electrons on the surface of 4He. The superfluid phases of 3He were excluded, e~cept for superfluid film flow, as 3He involves a separate set of problems. These proceedings arise from a lively Advanced Research Workshop on Excitations in Two-Dimensional and Three-Dimensional Quantum Fluids held in Exeter 10-15 August 1990. Fifty scientists took part and each provided a written contribution. Perhaps it is a testimony to the discussions that several papers were revised by the authors after the meeting. The order of the chapters is the same as the presentations at the workshop. This arrangement starts with 4He in three dimensions which establishes a base from which the two dimensional properties can be viewed. At the end of each section there is a report on the discussion session. These are interesting and useful chapters as they clarify points made in the papers and define the boundary of current understanding.
