It is an edited book with chapters written by multi-disciplinary specialists in their specific subject areas. We all are indebted to nature for providing us food and its resources for our subsistence and survival. Food processing is expected to affect content, activity and bioavailability of nutrients; the health-promoting capacity of food products depends on their processing history.
