Advanced Dairy Chemistry-1. Proteins addresses the most commercially important constituents of milk in terms of their roles in nutrition and as functional components in foods. This third edition, which is the work of dairy scientists and other experts from around the world, provides detailed scientific information on all aspects of milk proteins. An extensively revised Table of Contents includes more chapter-level headings to make the material more accessible and highlights a number of key topics, such as methods for resolving and identifying proteins, biologically and physiologically active proteins, molecular genetics and functional milk proteins-all of which have assumed increased importance in recent years. All chapters from the second edition have been completely updated and coverage of the biological properties and stability of milk proteins has been enhanced greatly. The book has been expanded from 18 chapters in the second edition to 29 chapters and is divided into two parts: Part A (Chapters 1-11) describes the more basic aspects of milk proteins, while Part B (Chapters 12-29) reviews the more applied aspects. New topics include an overview of the milk protein system, allergenicity of milk proteins, bioactive peptides, genetic engineering of milk proteins, and certain additional chapters on protein-rich dairy products. This authoritative work summarizes current knowledge on milk proteins and suggests areas for future work.

A provocative and timely case for how the science of genetics can help create a more just and equal society In recent years, scientists like Kathryn Paige Harden have shown that DNA makes us different, in our personalities and in our health—and in ways that matter for educational and economic success in our current society. In The Genetic Lottery, Harden introduces readers to the latest genetic science, dismantling dangerous ideas about racial superiority and challenging us to grapple with what equality really means in a world where people are born different. Weaving together personal stories with scientific evidence, Harden shows why our refusal to recognize the power of DNA perpetuates the myth of meritocracy, and argues that we must acknowledge the role of genetic luck if we are ever to create a fair society. Reclaiming genetic science from the legacy of eugenics, this groundbreaking book offers a bold new vision of society where everyone thrives, regardless of how one fares in the genetic lottery.

Population Genetics and Ecology is a collection of papers presented at a 1975 conference-workshop held in Israel and is devoted to topics in population genetics and ecology. Contributors discuss topics related to population genetics and ecology, including the determinants of genetic variation in natural populations; experimental design and analysis of field and laboratory data; and theory and applications of mathematical models in population genetics. The book describes a number of field and laboratory studies that focus on a variety of spatial and temporal character and enzyme frequency patterns in natural populations, along with possible associations between these patterns and ecological parameters. This volume is organized into three sections encompassing 31 chapters and begins by summarizing the results of field and laboratory research that investigated gene frequency patterns in space and time of animal and plant populations. This book then explains the origin of new taxa; animal and plant domestication; variation in heritability related to parental age; and problems in the genetics of certain haplo-diploid populations. The next section offers a combination of data analyses and interpretations of related models, with some papers devoted to the origin of race formation and the interaction between sexual selection and natural selection. Among the theoretical studies presented are facets of selection migration interaction; stochastic selection effects; properties of density and frequency dependent selection; concepts and measures of genetic distance and speciation; aspects of altruism; and kin selection. This book will be of interest to naturalists, experimentalists, theoreticians, statisticians, and mathematicians.

With the invention of agriculture, the man left the nomadic state to become sedentary. But at the same time, he attracts rodents and cats with them. With the invention of the grain silo began the domestication of cats in Egypt, about 4000 years ago. Tired of his god status, the Egyptian Mau has left the land of his ancestors to conquer the world. Alley cats and breed cats are all his worthy heirs. This is the story of the most beautiful of the Egyptian Mau cat's children, pedigree cats, that you'll find in this book. As a high level scientific graduate Didier HALLÉPÉE was not promised to feline life. The discovery of the noblest of cats, the home cat, put him on the way of breeding. His passion for the Egyptian Mau did not prevent him to mix with many breed and enjoy all such beautifulness. This is this passion he shares with us today.
