Resumen: Se llevo a cabo la caracterización física y química del aceite de las semillas de Vitis labrusca L. (uva Isabella), obtenidas como desecho del procesamiento de la pulpa para jugo, siguiendo los procedimientos descritos en las normas ICONTEC para grasas y aceites.Las semillas fueron lavadas y secadas (durante 2 días a 40oC), luego fueron molidas en presencia de nitrógeno líquido; la extracción se realizó con n-hexano. Los parámetros físicos evaluados fueron: densidad (0.9246g/cm3) e índice de refracción (1.4753 a 23oC). Los químicos: índice de acidez (2,1870 % de ácido oleico), índice de peróxidos (0 meq de O2/Kg), índice de saponificación (175.1161) meq KOH/g) e índice de yodo (136.6853 cg de I2/g). Según el análisis por Cromatografía de gases-espectrometría de masas, los ácidos grasos mayoritarios son el ácido linoleico conjugado (53,843%), el oleico (E) (24,671 %) y el palmítico (13,922 %). De acuerdo con el análisis de vitamina E por CLAE, en el aceite están presentes los siguientes isómeros de tocoferoles y tocotrienoles: Tocotrienol, -Tocotrienol, -Tocotrienol, -Tocoferol, -Tocoferol, -Tocoferol. En la materia insaponificable, se identificaron los siguientes fitoesteroles: Campesterol (9,691%), Estigmasterol (10,161%), Campestanol (7,276%), siendo el Beta-sitosterol el mayoritario (72,870%).La actividad antioxidante (capacidad captadora de radicales libres) se determinó empleando el parámetro del IC50 (42,62% de inhibición). Se realizó el seguimiento de estabilidad del aceite de las semillas de uva Isabella mediante el estudio del índice de acidez y peróxidos durante dos meses consecutivos, se observó que se puede obtener un aceite estable hasta la cuarta semana después de su extracción, pasado este tiempo, el aceite sufre un acelerado proceso de degradación oxidativa.
