The second edition of this book on lipids, lipoprotein and membrane biochemistry has two major objectives - to provide anadvanced textbook for students in these areas of biochemistry,and to summarise the field for scientists pursuing research inthese and related fields. Since the first edition of this book was published in 1985 theemphasis on research in the area of lipid and membrane biochemistry has evolved in new directions. Consequently, thesecond edition has been modified to include four chapters on lipoproteins. Moreover, the other chapters have been extensivelyupdated and revised so that additional material covering the areas of cell signalling by lipids, the assembly of lipids andproteins into membranes, and the increasing use of molecular biological techniques for research in the areas of lipid, lipoprotein and membrane biochemistry have been included. With the development of highly sophisticated analytical techniques and instrumentation during the past 15-20 years, progress in the field of lipid biochemistry has been greatly accelerated. Within this period, there has been an increasing volume of information concerning the distribution and metabolism of lipids in animals and, more recently, in plants. The fungi have played an important role in studies concerning the biochemistry of lipids and, in this text, they are treated separately from the photosynthetic plants. This book is concerned with distribution and bio chemistry of lipids in fungi. The text is divided into three sections, beginning with an introduction to fungallipids which includes total lipid abundances in fungal cells and cell fractions and cultural conditions influencing lipid production. In the second section, each chapter deals with the distribution andjor metabolism of a single lipid class as it occurs in fungi. Comparisons with plants and animals are also included. Six major lipid classes are covered which include the aliphatic hydrocarbons, fatty acids, sterols, triacylglycerols, glycerophosphatides, and sphingolipids. The third section contains two chapters concerned with the physiology and ultrastructure of fungal spore formation and germination with particular emphasis on lipids. Although this book is not intended to be a comprehensive review of the literature, the information presented is compiled from over 1000 articles, most of which were published during the past 10-12 years.

The available literature on freshwater fungi is limited. Over the subsequent years a considerable volume of scientific papers have appeared scattered throughout numerous journals. Recently, there has been tremendous scientific interest in the role of phospholipids and particularly phosphatidylcholine (lecithin) in a variety of biological processes. These include the involvement of phosphatidylcholine in biological membranes, as a component of plasma lipoprotein, as a transporter of choline in the body, and also as a "reserve", and possibly only source of unesterified choline. Moreover, numerous clinical studies have recently been conducted, to evaluate the possible uses of externally supplied lecithin in the treatment of some intractible neuropsychiatric disorders (e.g. tardive dyski.nesia, Alzheimer's disease, etc.) and other conditions (e.g. hypercholesteremia). Results to date are encouraging, yet equivocal. This is due, in part, to the fact that the field of phospholipid methodology is highly complex. There is much confusion in the literature, and many ambiguities still remain in the interpretation of experimental findings. This is particularly so for phenomena involving phospholipid function in the central nervous system. This book incorporates the proceedings of the Fourth International Colloquium on Lecithin, which took place in Chicago, Illinois, USA, on September 15-17, 1986. The purpese of this colloquium was to review, in a comprehensive manner, basic principles as weli as current information about the technology, biochemistry, physiology and therapeutic potential of lecithin. Over 108 individuals from all over the world participated in the sessions. The meeting was subdivided into oral presentations and panel discussions (see Table of Contents). It was sponsored and financed by the Lucas Meyer GmbH (Hamburg), for which the editors are most grateful.
