Kaempferol is a natural plant product known for its health promoting effects and its pharmacological and nutraceutical properties. It is common in vegetables, fruits, plants and herbal medicines. Studies have shown that it reduces cancer, arteriosclerosis, cardiovascular disorders, and serves as an antioxidant and anti-inflammatory. This book discusses the biosynthesis of kaempferol derivatives and the other flavonols identified in grapes, and the nutraceutical characteristics of these compounds with particular emphasis for kaempferol, by reporting its contents in grapes and wines. Also, the influence of different elicitors in flavonol composition (and more specifically in kaempferol) is presented. Moreover, the antitumor and the anti-inflammatory activities of kaempferol on diverse diseases are studied together with the importance of flavonoids in co-therapy. Also, molecular mechanistic studies report that kaempferol modulates a number of key elements in the cellular signal transduction pathway linked to apoptosis, angiogenesis, inflammation, and metastasis. Additionally, this book examines different natural sources of kaempferol with its pharmacokinetics (oral availability) and safety. Finally, saffron petals can be a readily exploitable good source of kaempferol for many applications. The occurrence of kaempferol and its glycosidic patterns in different crocus species is shown. This book presents an overview of the biosynthesis, food sources and therapeutic uses of this promising compound.

Interest in the potential medical use of naturally occuring chemicals in plants is increasing. This is intended to provide a comprehensive and up- to-date directory of plants and the substances found in them. It covers over 8000 plant species. This dictionary, which covers the literature up to the end of 1987, is intended to provide this information in a readily accessible form. Each plant is listed alphabetically according to genus and species. Wherever possible, the original papers have been consulted and references to these are given for each class of compound.

During last couple of decades, a great deal of research has explored what exactly plants contain (bioactives) and how these molecules may interact with human physiology at the molecular level. It is extremely important to know what happens to plant bioactives or their biological activities when processed or isolated under various reaction conditions. Huge numbers of extraction or food manufacturing methodologies are adversely affecting the quality of these phytonutrients so there is a prompt need to highlight these processes/methods and replace them with more novel, efficient, green, or eco-friendly ones. A Centum of Valuable Plant Bioactives is a comprehensive resource on the top 100 plant bioactives available. Chapters are grouped together by bioactives, with sections on carotenes, xanthophylls, terpenoids, steroids, polyphenols and more. This is an essential guide for botanists, food technologists and chemists, nutritionists and pharmacists. - Highlights the top 100 plant bioactives, their biogenesis, distribution, extraction/purification, and metabolism - Contains the latest advances in botanic biology, analytical chemistry and food technology - Explores potential applications including food additives, digestion and health, chemoprevention and biotherapy

This book is dedicated to new and important research in the field of phytochemistry which is in the strict sense of the word the study of phytochemicals. These are chemicals derived from plants. In a narrower sense the terms are often used to describe the large number of secondary metabolic compounds found in plants. Many of these are known to provide protection against insect attacks and plant diseases. They also exhibit a number of protective functions for human consumers. Techniques commonly used in the field of phytochemistry are extraction, isolation and structural elucidation (MS,1Dand 2D NMR) of natural products, as well as various chromatography techniques (MPLC, HPLC, LC-MS).

Faba bean is a species of flowering plant in the Fabaceae family and the fourth most widely grown winter season legume after pea, chickpea, and lentil. The nutritional profile of faba beans is excellent as they contain an adequate quantity of proteins, carbohydrates, vitamins, minerals and various polyphenols. Faba bean seeds are a rich source of carbohydrates and starch. Because of higher amylose content than cereal starches, legume starches provide distinctive properties such as high gelation temperature, fast retro-gradation, high resistant starch and gel elasticity to food systems. Faba bean has been a beneficial source of protein in food products worldwide for centuries and continues to be highly produced and consumed to this day. Faba bean Chemistry, Properties and Functionality studies the global status and production of faba bean food products plus their agronomy, nutritional value and potential medicinal applications. The agrarian conditions are studied in full, as are postharvest practices. The chemical makeup of faba bean is a major focus, especially in relation to nutrient composition and quality. Chapters in this text focus on anti-nutritional attributes, antioxidants and bioactive compounds plus the effects of processing, storage and cooking on their nutritional value. Starch and its modification, structure, properties and industrial applications are covered, as is protein, genetic improvement and functional product formulation. The text also looks at the future perspectives of this valuable plant and food source. To date, no reference works have exclusively covered faba bean. This book provides a much-needed single source reference point for researchers looking to gain knowledge on this important plant and its use in high protein, health-beneficial food products.
