Obesity is a global public health problem of crucial importance. Obesity rates remain high in high-income countries and are rapidly increasing in low- and middle- income countries. Concurrently, the global consumption of unhealthy products, such as soft drinks and processed foods, continues to rise. The ongoing expansion of multinational food and beverage companies, or ‘Big Food’, is a key factor behind these trends. This collection provides critical insight into the global expansion of ‘Big Food’, including its incursion into low-and-middle income countries. It examines the changing dynamics of the global food supply, and discusses how low-income countries can alter the ‘Big Food’-diet from the bottom-up. It examines a number of issues related to ‘Big Food’ marketing strategies, including the way in which they advertise to youths and the rural poor. These issues are discussed in terms of their public health implications, and their relation to public health activities, for example ‘soda taxes’, and the promotion of nutritionally-healthier products. This book was originally published as a special issue of Critical Public Health.

Since 1980, childhood obesity rates have more than tripled in the United States. Recent data show that almost one-third of children over 2 years of age are already overweight or obese. While the prevalence of childhood obesity appears to have plateaued in recent years, the magnitude of the problem remains unsustainably high and represents an enormous public health concern. All options for addressing the childhood obesity epidemic must therefore be explored. In the United States, legal approaches have successfully reduced other threats to public health, such as the lack of passive restraints in automobiles and the use of tobacco. The question then arises of whether laws, regulations, and litigation can likewise be used to change practices and policies that contribute to obesity. On October 21, 2010, the Institute of Medicine (IOM) held a workshop to bring together stakeholders to discuss the current and future legal strategies aimed at combating childhood obesity. Legal Strategies in Childhood Obesity Prevention summarizes the proceedings of that workshop. The report examines the challenges involved in implementing public health initiatives by using legal strategies to elicit change. It also discusses circumstances in which legal strategies are needed and effective. This workshop was created only to explore the boundaries of potential legal approaches to address childhood obesity, and therefore, does not contain recommendations for the use of such approaches.

This book examines place and place-making in London’s Borough Market. In particular, it uses topo/graphy (‘place-writing) to interrogate the ways in which Borough Market’s material, social-sensual and discursive relations assemble to reproduce Borough Market as a place, market and marketplace. Its central premise is that market-processes – the negotiation and exchange of commodities –are place-processes. This means that the often-abstract relationships that ultimately define what we think of as the economy are embedded in the rich and every materiality, sociality, sensuality and meanings associated with place. By tracing out these different elements, topo/graphy illustrates the ways in which economic reproduction is grounded in particular and often discrete practices. However, by assembling them together, this highlights the ways in which place and place-making are the driving force behind the economy at large.

This book carried out in order to contribute to the scientific literature on new production techniques that can be used in food and beverage businesses, which are found to be lacking in the literature. It is thought that this study will be the main reference to the literature, food and beverage industry and scientists. In addition, it can be stated that this study will contribute positively to the orientation of our students who do internships, especially the managers and personnel involved in the production process of the food and beverage industry.
